 Since the temperatures continue to fluctuate, it’s hard to know for sure whether spring is on its way. There are some of us who rather enjoy the colder temps, while there are others who would just like for them to be gone. We’ll be combining delicious spring vegetables in a warm and hearty, to keep you warm on those cooler days, and give you hope for spring. Though these are spring vegetables, they should be fairly easy to find right now in your local market or grocery.

What You’ll Need:

For the Soup:
  • 1 ½ cups of small pasta such as ziti or fusilli
  • 2 tbs of olive oil
  • 1 large leek, thinly sliced
  • 1 diced shallot
  • 1 diced carrot
  • 1 tsp tomato paste
  • 2 minced garlic clovesfresh parsley, chopped-optional
  • 10 cups of chicken or vegetable stock
  • 1 cup of white beans
  • 2 tomatoes, small wedges
  • 1 cup of diced zucchini
  • 8 spears of asparagus, 1.5 inch pieces
  • 1 cup of peas-frozen or fresh
  • 1 cup mushrooms
For the Pesto:
  • salt and pepper to taste
  • 1 cup basil leaves
  • ¼ cup parmesan
  • ¼ cup olive oil
  • 2 cloves minced garlic
  • 1 large tbs of walnuts

How to Do It:

For the Soup:
  1. Heat Olive Oil
  2. Add leek, shallot, carrot, salt and pepper-cook for 5-7 minutes
  3. Pour in tomato paste and garlic
  4. Next, add chicken or vegetable stock, beans, more salt and pepper-bring to a boil
  5. Once the soup is boiling, add the pasta and cook for another 10 minutes
  6. Add zucchini, tomatoes, asparagus, peas and mushrooms
  7. Add pesto, stir in
For the Pesto:
  1. Put the basil and walnuts into a food processor, mix well
  2. Add garlic and cheese, mix again
  3. Slowly drizzle in the olive oil and add salt and pepper
  4. Add the pesto to the soup and serve immediately
