At Great Harvest in Wichita, Kansas, in our bread gifts section, our bakers create mini loaf sampler bags. These tiny loaves are perfect for bread boats! These are loaves of bread with the tops cut, the insides scooped out and then stuffed with a variety of delicious things. They can be grilled or served cold. Here are a couple of recipes for bread boats.

Corned Beef Bread Boats  

Ingredients:
2- small loaves of French or Italian bread
1- 8-ounce package of cream cheese, at room temperature
1.5 cups of sharp cheddar, grated
4 ounces of cooked and finely chopped corned beef.
1/3 cup of green onions, finely chopped
1/2 medium tomato, finely chopped
1/4 red bell pepper, finely chopped
1/4 teaspoon hot sauce, such as Tabasco
1/4 teaspoon chili powder  

Directions:
In a large bowl, mix all the above ingredients until fully combined.
Preheat the oven to 350 degrees F.
Cut an oval in the top of each loaf of bread.
Scoop the bread out of the center making a "bread boat" out of each loaf.
Place the bread on a cooking sheet.
Spoon the mixture into the hollow center of each bread loaf.
Bake for 30 minutes, and serve warm with tortilla chips and/or toasted bread chunks.

Ham & Cheese Bread Boats  

Ingredients:
2 mini loaves of French bread
1 cup sour cream
1 cup cheddar cheese, shredded
4 ounces cream cheese, softened
1/8 cup green onions, chopped
1/4 cup ham, chopped
1/8 cup green chiles, chopped
1 teaspoon Worcestershire sauce  

Directions:
Slice the top off of French bread loaves and hollow out the inside.
Mix all the ingredients and pour into hollow of the bread. 
Put top back on and wrap the bread in foil. 
Bake in a preheated 350 degrees F. oven for one hour.
Serve with crackers, chips or toasted bread chunks.
